Our Current Special Recipe
Enjoy this Chicken Salad!
Cooking time: 10-12 minutes
Clean up time: 3-5 minutes
Total time: 13-17 minutes
6 oz. cooked chicken breast cutlets
Pure water (as needed for steaming the following vegetables):
1 medium yellow onion, chopped
2 carrots (peeled), chopped
1/2 cup cooked chickpeas
1/4 avocado (peeled)
3 cups mesclun greens
1 medium size elephant garlic (broiled/chopped)
1 tablespoon olive oil
1-2 teaspoons Vegenaise spread
Savory salt free all-purpose seasoning, to taste
- Steam the vegetables for about 10-12 minutes or to taste and desired consistency. Add the chickpeas and mix the medley.
- Remove the vegetable medley from the steamer basket.
- Add the medley to the chicken (shred the chicken into bite size pieces), mesclun greens, and avocado. Mix well. Add the garlic, oil, spread, and seasoning. Mix well and divide in two bowls and serve. Enjoy!
